Friends, I think we can all agree that chicken has earned its place in the weekly rotation. It’s quick, it’s versatile, it works with basically every flavor profile on the planet, and probably half the recipes on my blog happen to feature it. No complaints here about chicken, really.
But even the most reliable thing in your kitchen can start to feel a little... predictable. And if you’ve been making the same three chicken dinners on repeat and have been craving something different, that’s totally normal. We’ve all been there when the last thing we want to see is another chicken breast.
Every recipe on this list is just as easy and just as weeknight-friendly as anything you’d make with chicken. They just happen to start something else entirely: salmon, ground beef, chickpeas, pasta, and so on. All the satisfaction with none of the chicken fatigue.
A large skillet or sauté pan. So many of these recipes come together in one pan on the stovetop — a good heavy-bottomed skillet makes all the difference.
A large sheet pan (plus parchment paper). For the salmon and beef recipes, the oven does most of the work. Line it with parchment every time for easy cleanup — you’ll thank yourself later.
A large pot or Dutch oven. Essential for the pasta and soup recipes on this list. It’s one of those kitchen workhorses that earns its place on the stovetop every single week.
A good blender or food processor. A handful of these recipes have sauces or dressings that come together in seconds with a blender. If you don’t have one yet, it’s worth it.

Let me introduce you to my Better Than Chipotle Carnitas Bowls. Tender, juicy pork carnitas made in the Instant Pot — seasoned with garlic, cumin, chili powder, orange juice, and lime — broiled until the edges get perfectly crispy, then piled into a bowl with fluffy rice, fresh pico de gallo, guacamole, and my quick marinated red onions. The name says it all. And yes, the guac is free.
If you have been sleeping on salmon, these Bang Bang Salmon Bowls are going to wake you RIGHT up. Tender, flaky salmon is coated in the most addictive bang bang sauce—creamy, sweet, and just the right amount of spicy—and served over fluffy rice with all the toppings. This one is a certified weeknight hero.
For the nights when you want something that feels a little more elevated but still comes together fast, my Saucy Salmon Curry Rice Bowls are it. The salmon is nestled into a rich, fragrant coconut curry sauce that is so good you will want to pour it over everything. Served over rice, it’s a full, satisfying dinner in one bowl — and it comes together in under 30 minutes. I make this one on repeat.
These Air Fryer Crispy Salmon Bites with Lemon Dill Sauce are exactly what they sound like: little nuggets of perfectly crispy salmon, made in the air fryer, served alongside a bright and creamy lemon dill dipping sauce that I could honestly eat with a spoon. They’re fun, they’re fast, and they are absolutely perfect for the nights when you want dinner to feel a little more exciting.
These Beef Bulgogi Bowls with Spicy Sauce are my better-for-you take on one of my all-time favorite dishes. Thinly sliced beef is marinated in a savory-sweet bulgogi sauce, seared until caramelized, and served over rice with a drizzle of spicy sauce and all the fixings. It tastes like a restaurant meal and comes together in your kitchen in no time.
These Chili Cheese Baked Beef Tacos are the kind of recipe that makes everyone at the table very, very happy. Ground beef seasoned with bold chili spices, loaded into taco shells with melted cheese, and baked until everything is golden and crispy. They’re easy, they’re crowd-pleasing, and they are 100% going into your regular weeknight rotation — I’d bet on it.
For the nights when you want something cozy and completely hands-off, these Juicy Middle Eastern Sheet Pan Kebabs are your answer. Perfectly spiced ground beef kebabs are baked right on a sheet pan alongside whatever veggies you have on hand, then served with a creamy sauce for dipping. The oven does all the work, the cleanup is minimal, and the flavor payoff is massive. This one is so good.
If you’ve never made my Marry Me Chickpeas, please consider this your sign. This is my plant-based riff on the viral “marry me” chicken, and I truly believe it might be even better than the original. Chickpeas are simmered in a creamy, sun-dried tomato sauce that is so rich and so delicious that you will want to serve it over pasta, over rice, or honestly, just with a piece of crusty bread. It is the ultimate meatless dinner that never, ever feels like a compromise.
This Creamy No-Cream Chickpea Rigatoni is pure weeknight magic. A velvety, creamy sauce made entirely without heavy cream (yes, really), tossed with hearty rigatoni and tender chickpeas for a pasta dinner that is rich, comforting, and one of the best things to come out of my kitchen. If you are someone who thinks meatless dinners can’t be filling, this one will prove you wrong every single time.
These Stuffed Cabbage Rolls with Gyoza Dipping Sauce are made of tender cabbage leaves stuffed with a savory, seasoned filling and served with a gyoza dipping sauce that is tangy, salty, and completely addictive. If you’ve never made cabbage rolls before, this is the recipe to start with.
