Jenn Lueke's Marry Me Turkey Meatballs
a special sneak peek from Jenn Lueke Don’t Think About Dinner
One of my favorite parts of doing the work that I do is getting to collaborate with other creators I genuinely admire. I love cheering people on when they pour years of work into something big and brave like a cookbook. I know exactly what it’s like to be there.
That’s why I’m so very excited to celebrate Jenn Lueke from Jenn Eats Goood and the launch of her brand new cookbook, Don’t Think About Dinner 🎉.
Jenn was kind enough to share a recipe from the book with the Beyond the Kale readers, and I couldn’t think of a better one to start with. These Marry Me Turkey Meatballs come straight from DTAD, which just hit shelves on January 13th.
When she agreed to come over to my house next week (January 26!) to cook and film this recipe together, it felt like the perfect excuse to give you a little sneak peek first.
If you’ve followed Jenn for a while, this recipe will feel very on-brand for her. It’s full of bold flavor, smart swaps, and totally approachable. If you’re new to her work, consider this your official introduction!
From Jenn: If a dish could put a ring on it, this would be the one. This is my take on the creamy sun-dried tomato, basil- packed marriage of the viral Marry Me Madness— in meatball form. Bonus: It’s dairy-free! Nutritional yeast brings the cheesy depth. Spoon it over rice, take a bite, and consider this your new forever favorite. I stand with the power of the classic Marry Me flavors.
If this recipe is any indication of what’s inside, Don’t Think About Dinner is going to be one you reach for again and again. The book is officially out now, and I highly recommend picking up a copy and giving it a permanent place in your rotation.
