The Only Brunch Recipes You Need This Spring

I’ll be completely honest with you, Easter in my house is pretty low key. It’s not a very big production—just me, the boys, good food, and a relaxed, laid-back morning. Which is really my favorite kind of day anyway.
And obviously as they get older, what that looks like shifts more and more. But I’m enjoying the holidays with them through every season of their childhood!
What never changes and what I do put thought into… is the food. I really love brunch food because you get to have the perfect mix of sweet and savory foods. Dutch baby next to an egg bake next to a plate of muffins? Completely acceptable. Encouraged, even.
A couple of things on this list you can fully prep the day before, which is how I like to approach it. That way the morning stays relaxed and I’m not running around the kitchen while everyone is already super hungry.. There’s also impressive dishes that take almost no effort (looking at you, Dutch baby), and naturally, some fresh fruit. But, it’s not just any fruit salad, trust me.
Save this one for Easter, or just a regular Sunday when you want the day to feel a little more special than usual.
A cast iron skillet. Essential for the Dutch baby. This is one of those kitchen essentials that earns its place. It also is needed for the strata and can be used for the quiche too!
A large baking dish. The breakfast bake uses one.
A good blender. The Dutch baby batter comes together in about 30 seconds in a blender. Also useful for the quiche.
A large sheet pan (plus parchment paper). This is needed for the croissant sandwiches! Line it with parchment every time for easy cleanup.

If you’ve never made a Dutch baby before, this is your sign to make this Blueberry Lemon Dutch Baby. You blend the batter, pour it into a hot buttered cast iron, and 17 minutes later you pull out something that looks like a professional pastry chef came to your house. It’s light, fluffy, loaded with blueberries and lemon zest, and practically impossible to mess up. I first had a Dutch baby at The Original Pancake House when I was a kid and have been obsessed ever since. It is the ultimate brunch showstopper that requires almost no effort.
This is the anchor recipe for any brunch spread, and the one I’d tell you to make first. It’s essentially a savory breakfast casserole—layers of crusty baguette, fluffy eggs, cottage cheese, spinach, baby tomatoes, and parmesan—all baked together in one pan until golden and puffed. It makes eight servings, it reheats great, and the best part is you can assemble the whole thing the night before and just pop it in the oven in the morning.
Think of this Spinach & Sausage Breakfast Bake as the classic breakfast sandwich, but multiplied by twelve and baked into one dish. Sliced English muffins layered with fluffy eggs, Italian sausage, ricotta, and spinach, then baked until golden and bubbling. Serve it alongside crispy potatoes, and you’ve got everything that you know and love about breakfast, rolled into one!
No brunch is complete with a good quiche! This is my High Protein Mixed Veggie Phyllo Quiche that comes together with whole eggs, creamy cottage cheese, and a medley of mixed vegetables, wrapped together in a flaky Phyllo dough crust. Trust me – it’s as good as it sounds, and I know you’re going to love it!
When I say that these are truly the Best Ever Croissant Breakfast Sandwiches, I mean it. These sandwiches are filled with soft scrambled eggs, melted cheddar cheese, and a medley of turkey, ham, and bacon, for a delicious and hearty breakfast on-the-go.
If you love bagels, but hate the work that it takes to make them, then prepare to have your mind absolutely blown. The Viral TikTok 2-Ingredient Air Fryer Bagel Bites are soft, pillowy, bite-sized bagels that are not only so simple and easy to whip up on a whim, but also happen to be gluten-free.
