Wraps & Sandwiches You Should Be Eating for Lunch This Summer

Friends, summer lunches feel different, right?! When it’s sunny and hot, I want something I can make fast, eat with my hands, and maybe even enjoy outside. A wrap, a sandwich, something handheld—that’s the type of summer lunches that I really love.
I’ve been on a bit of a wrap kick lately—partly because I really love them and also there’s just a lot of fun and creative things happening that involve swapping out the bread entirely. Watermelon as bread? Check. Pickles as bread? Check. Cottage cheese as bread? Check.
But don’t worry—there’s some actual bread in here too, including a Kimchi Grilled Cheese and some of the most delicious Pulled Pork Sandwiches. These are ten of my favorite lunch ideas that I think you should make this summer.
A baking sheet (plus parchment paper). Several of the wraps on this list get baked on a sheet pan.
A mandoline for the zucchini especially.
Air Fryer. A few of these come together faster and crispier in the air fryer than the oven.
An Instant Pot for the pulled pork sandwiches is a must.
A good sharp knife. For the watermelon sandwich especially — you need clean, even cuts to get those thick, square slices.
Cutting board. Between the watermelon, the zucchini, and the pulled pork, you need a sturdy cutting board to make prep faster and keep everything contained.
A mini blender or food processor. For the Caesar dressing in the pepperoni pizza Caesar wrap and the burger sauce in the pickle burger wrap.
