tips & swaps
Wrap each sandwich tightly in foil and then in a zip-lock bag before freezing — it prevents freezer burn and keeps them tasting fresh for up to a month
The eggs continue to cook slightly when you reheat from frozen, so pull them off the heat just before they look done when you’re making the initial batch
Any cheese works — cheddar, American, swiss, or pepper jack if you want a little heat
Gluten-free English muffins work just as well
