I’ve also got a pasta recipe made with Gochujang sauce that I’ll claim as the best pasta you’ll have this entire year—yes, I really mean it!

The rest of the week is a really good mix of delicious recipes—an impressive salmon dish, a 20-minute dish that EASILY beats that takeout you’re thinking about, and a breakfast you can make on Sunday and have ready for the entire week. Plus, there’s a snack that is a healthier option if you’re craving a Snickers.

tips & swaps

  • Wrap each sandwich tightly in foil and then in a zip-lock bag before freezing — it prevents freezer burn and keeps them tasting fresh for up to a month

  • The eggs continue to cook slightly when you reheat from frozen, so pull them off the heat just before they look done when you’re making the initial batch

  • Any cheese works — cheddar, American, swiss, or pepper jack if you want a little heat

  • Gluten-free English muffins work just as well
