Friends, I hope everyone is having the most amazing Fourth of July! Whether you’re at a barbecue, on the beach, or just enjoying a slower day at home, I have next week’s meal plan waiting for you when you’re done (for those celebrating).

I have two fairly new recipes this week that I’m so excited to share with you. One is a Middle Eastern-inspired sheet pan dinner that’s a variation on my viral kebabs—this one is just as good as the original and I need you to give it a try! The other one I’m really excited to share with you is a chicken salad that tastes like the inside of a really good gyro, comes together in 15 minutes with no cooking, and has 45 grams of protein per serving. It’s perfect for an effortless lunch this week.

The rest of the dinners this week are just as delicious and perfect for summertime. And both the breakfast and snacks this week are great for making on Sunday and enjoying all week. Easy to make and easy to enjoy—just the way we all like it!

For breakfast this week, we’ve got these Strawberry Shortcake Baked Oats. They’re made with rolled oats, protein powder, baking powder, vanilla extract, almond milk, egg, and maple syrup that gets mixed together and poured into a baking dish, topped with fresh strawberries, and baked. It comes out light, fluffy, and cake-like.

tips & swaps

  • Fresh strawberries give the best result but frozen work fine — no need to thaw them first

  • Let it cool completely before slicing so the portions hold together cleanly

  • A drizzle of honey or almond butter right before eating adds extra richness

  • Keeps in the fridge for up to 5 days, or freeze individual portions for up to 2 months
