Friends, I have been making and eating the lunch in this week’s plan on repeat lately. It is so perfect—herbaceous, creamy, and exactly what I want on my plate every single day in the summer. Not only is it delicious and light, but it’s perfect for meal prepping and just grabbing from the fridge when you’re ready for lunch.

This week is also unintentionally very mango-forward, which I am fully embracing. Fresh mango shows up in two of the dinners and dried mango in the snack, which takes only a couple of ingredients and ten minutes and is one of the most perfectly summery snacks.

Everything this week has that bright, fresh, nothing-too-heavy feeling that I want out of a summer meal plan, from the nacho night that comes together super fast, to the air fryer chicken that has become one of my most-made dinners of the past few weeks.

Breakfast is the German Chocolate Cake Overnight Oats — everything you love about the cake, but made into a prep-ahead dish that is waiting for you in the fridge every morning.
