Friends, I really, really love the lunch in this week’s plan. It’s a quinoa salad loaded with rotisserie chicken, Persian cucumbers, edamame, and a big handful of fresh herbs, all tossed in a peanut dressing that could be bottled as a drink. It’s seriously that good. The crunchy baked quinoa on top acts like the best kind of crouton.
I’ve also included a nice selection of proteins and flavors in the dinners this week. The Copycat Sweetgreen Caramelized Steak Plate has several components, but it really doesn’t take long at all to come together. It’s worth every step. The Street Corn Chicken Power Bowls have charred corn, cotija, and a creamy lime dressing, and it tastes exactly like summer should.
Breakfast is oats but a little bit different, but I need you to bear with me! It swaps in cauliflower rice for half the oats, which sounded strange to me too until I tasted it and it just tastes like carrot cake. And the snack is one that Instagram went crazy for recently.

A spoonful of cream cheese or greek yogurt stirred in at the end makes it taste even more like cake
Reheats well with a splash of milk to loosen it back up
