Happy June, friends! I am really excited about this week’s plan. Two of the recipes are brand new on the blog and possibly some of my favorite things I’ve made in a while — one is a 20-minute dinner that is SO SO good and will make you put down your delivery app for good, and the other is a blender muffin that is so soft and citrusy you’ll be looking forward to breakfast every single morning.

The rest of the week leans all the way into summer with some air fryer shrimp tacos topped with a homemade mango avocado salsa and a salmon dish with a lemon-butter-caper sauce that takes 20 minutes and tastes like something you’d order at a nice restaurant.

Lunch and the snack are both made for Sunday prep and get better every day they sit in the fridge. This is my idea of a perfect week of meals. Let’s get into it!

These blender Orange Olive Oil Muffins are soft, fluffy, and bursting with bright citrus flavor, made completely in the blender for the easiest cleanup imaginable. Made with a whole fresh orange, rich olive oil, and Greek yogurt, they come together in minutes and bake up perfectly tender every single time. Top them with an optional orange glaze, and you’ve got a bakery-worthy muffin that just happens to be gluten-free!

tips & swaps

  • Make sure every trace of orange seed is removed before blending

  • Don’t over mix once the flour goes in — pulse just until no dry streaks remain

  • Monk fruit can be swapped for maple syrup or coconut sugar

  • Keeps in the fridge for up to 1 week, or freeze for up to 2 months
