We finally had a few days this week where I could open all the windows and actually leave them open. No jackets needed at school drop-off, the back door opened while I was recipe testing, and the boys and Logan were able to play and spend time outside—all signs of beautiful weather that I am definitely soaking up as much as possible. It doesn’t seem like it should be that big of a deal but after a few months of everyone being mostly cooped up inside, it really does make everything better.
All that to say, I am enjoying that energy! Almost as much as I’m enjoying the meal plan for this week.
We’ve got bang bang salmon bowls that come together in twenty minutes and taste like something you’d order at a restaurant and are really excited about. A one-pan Mediterranean chicken orzo that smells incredible and tastes even better. And a saucy coconut chicken that I made and was asked for again two days later because it’s sooo good.
Breakfast is apple and almond croissant baked oats, which I’ve been making on repeat because they taste like dessert but keep everyone full until lunch. And the lemon bites in the snack slot always disappear from the fridge faster than I can keep up with.
