Friends, it is officially June this week so let’s lean into it! The lunch for this week’s meal plan is a recent one I’ve just shared. It’s one of the most refreshing things I’ve made in weeks, and it’s perfect for meal prep. It comes together with soba noodles, Persian cucumbers, garbanzo beans, fresh mint, and a sesame ginger dressing. It tastes like summer in a bowl. Delicious!
The dinners are exactly what I want on the table right now. A Crispy Chicken Milanese served over a simple arugula salad with lemon—the Giant Chicken Milanese I put on my Instagram this week reminded me just how good this is. Then, we’ve got some fish tacos with a creamy avocado crema and crunchy cabbage slaw—one of my favorite summer dinners! You can’t go wrong with fish tacos in summer. And then a pasta dish for the third dinner of the week is perfect for when you want something effortless and meatless to round things out.
Both the breakfast and snack options this week have plenty of protein to keep you full and nourished all week long. Enjoy and happy June!!

If protein-packed breakfast “cookies” are the name of your game, then you are going to want to try my Lemon-Blueberry Protein Breakfast Bites. They’re made with rolled oats, oat flour, protein powder, almond butter, mashed banana, maple syrup, coconut oil, lemon juice, lemon zest, and fresh blueberries. Finished with a simple powdered sugar and lemon glaze that sets as they cool. Make a batch Sunday and keep them in the fridge all week or freeze for up to two months.

Fold the blueberries in gently so they don’t break
Use a cookie scoop for evenly sized bites that bake at the same rate
