March is always confusing weather-wise. I genuinely can’t decide if I want cozy food or fresh food, but the answer is apparently both at the same time. It’s not quite winter anymore but it’s not spring either, and my kitchen has been reflecting that. One night I want something warm and saucy, the next I want something bright and crunchy with a good dressing (you know how much I love a good dressing).

So, this week’s plan leans into both! The pasta salad is a lunch that’s crisp and satisfying and tastes like spring is coming. The gochujang noodles warm you up without feeling heavy. And the Mediterranean beef bowls have that combination of fresh herbs and warm spices that works no matter what season the weather app says it is.

My boys are currently obsessed with the banana muffins, which means I’ve been making them on repeat and you will not find me complaining about that at all. And these Samoa bites are always dangerous to have in the fridge because they disappear at an alarming rate.

These Easy Banana Chocolate Chip Protein Muffins are muffins you can actually feel good about, which sounds like a low bar but is actually pretty hard to pull off without sacrificing taste. These are soft, packed with banana and chocolate chips, and have protein snuck in so breakfast is doing some real work. Make a batch on Sunday and you’re set for the whole week.

  • The riper the bananas the better—those really spotty ones you’ve been ignoring on the counter are exactly what you want here

  • Store in an airtight container at room temperature for a few days, or freeze and pull out as needed

  • Sub dairy-free chocolate chips to make them dairy-free
