Friends, making recipes is literally my job. And because of that, I don’t always get to linger on them as much as I’d like to. I’m always moving on to the next thing, developing the next recipe, filming the next video, and so on.
But that doesn’t mean I don’t dream about revisiting them all the time. There’s always the recipes I DO keep coming back to or the recipes that I know instantly they’ll become the ones I’ll keep coming back to in the future.
That’s where this list comes in. These are 10 of my recipes that I’d happily eat on rotation ALL. SUMMER. LONG. These 10 are recipes are ones I feel like you should definitely try before summer is over, so make sure to bookmark this and come back to it over the next couple months. ☀️
A high-speed blender. The chimichurri, the miso lime dressing, the street corn dressing, and the tzatziki all come together in a blender.
A food processor. For the tangerine sorbet especially.
A good grill or pan. The honey harissa chicken thighs and the steak chimichurri salad both need high heat to get that proper char and caramelization.
A baking sheet (plus parchment paper). The crispy rice for the watermelon poke and the miso crunch shrimp salad both require a sheet pan.
A meat thermometer. The chicken thighs and the skirt steak both benefit from knowing exactly when they’re done.
You can shop all of my kitchen favorites over on my Amazon Storefront — I keep it updated with exactly what I’m actually using.
For this Smashed Cucumber Salad, Persian cucumbers get smashed so they soak up every drop of a tangy honey-dijon dressing, then tossed with creamy avocado, salty feta, fresh dill, and chives. This recipe requires no cooking, comes together in 15 minutes, and travels perfectly to a cookout or dinner party. This one came out of a reader request and I’m so pleased with it!
This Watermelon Feta Salad with Candied Walnuts is everything you want out of a summer side dish — sweet, salty, crunchy, and packed with flavor in every single bite. Juicy watermelon and strawberries pair with crisp cucumbers, creamy feta, and a punch of red onion and fresh mint, then the whole thing gets tossed in a honey lime dressing that ties it all together. The real showstopper, though, is the refined sugar-free candied walnuts, which add the perfect crunch and are honestly good enough to eat on their own.
If you’re anything like me and count down the days until it’s warm enough to eat salad for dinner every single night, then buckle up, because I’m calling it now: this Miso Crunch Shrimp Salad with Crispy Rice is the salad of the summer. It’s loaded with protein and fiber, tossed in a tangy miso lime dressing you’ll want to drink straight from the blender, and topped with crispy, toasty rice that adds the perfect crunch to every bite. The best part is it actually gets better the longer it sits, which makes it a dream for meal prep or entertaining.
This High Protein Tzatziki Chicken Salad packs in 45 grams of protein per serving and tastes like the inside of your favorite gyro — cool, garlicky, herby, and loaded with kalamata olives, crunchy cucumbers, and crumbled feta. The whole thing comes together in about 15 minutes with no cooking required, and the homemade tzatziki is creamy without a drop of mayo in sight.
If you’re looking for a meal that’s packed with protein, fiber, and major flavor, then you need to add these Street Corn Chicken Power Bowls to your weekly rotation ASAP. This recipe takes everything you love about Mexican street corn and turns it into a hearty, satisfying bowl that’s perfect for lunch or dinner. Between the juicy seasoned chicken, the smoky corn salad, and that creamy street corn dressing, this one is seriously addictive.
If you’re looking for a salad that is hearty enough to actually be a meal, this Ultimate Steak Chimichurri Salad is the one. Juicy, seared ribeye is tossed with crisp Persian cucumbers, cherry tomatoes, garbanzo beans, red onion, and shaved parmesan, then coated in a bold, herby chimichurri that doubles as the dressing. It’s packed with protein and fiber, comes together in about 30 minutes.
Craving something bold, juicy, and a little spicy? These Honey Harissa Chicken Thighs are calling your name. It’s everything you want in a weeknight dinner, or a weekend cookout dish, with minimal effort and maximum flavor. The chicken thighs get marinated in a smoky-sweet blend of harissa, lemon, and garlic, then grilled (or baked!) until they’re caramelized and tender. And the best part? A silky harissa sauce that gets drizzled over the top and served on the side. It’s rich, tangy, and just the right amount of heat. Serve it with fresh parsley and pickled onions, and you’ve got the perfect dish.
If you’ve ever wanted to enjoy all the flavors of a classic Italian grinder sandwich in a lighter, meal-prep friendly way, then I think you’ll love my Favorite Grinder Pasta Salad. Think crisp lettuce, tangy pepperoncini, salty meats, creamy mozzarella, and a tangy vinaigrette, all tossed with pasta for the ultimate hearty, high-protein salad. When made with protein pasta, it packs around 35g of protein per serving, making it as filling as it is delicious.
These vegan Crispy Rice Watermelon Poke bowls are what happen when crispy rice dreams meet plant-based magic. While Bailey (aka Chef Bai) was in town, we decided to merge our signature styles — her love of vibrant, nourishing vegan food and my borderline obsession with crispy rice — and the result was divine. Whether you’re vegan or not, this is one of those recipes that you’ll be adding to your regular rotation. It’s sweet, savory, crunchy, spicy, and so satisfying.
Say “hello” to your new favorite summertime sweet treat! This 1-Ingredient Tangerine Sorbet is delightfully light, creamy, and refreshing, making it the perfect treat to help you cool off on those warm summer days. It’s made from just one easy ingredient- frozen tangerines- which is processed to perfection into a creamy sorbet. It’s the perfect base for your favorite toppings, or is lovely as-is for a healthy and refreshing twist on the classic frozen treat!
