This salad almost crashed my Instagram, because you all blew this one up (and for good reason) !!! The crispy rice salmon salad is far and away one of the best iterations of this dish I have done, with protein packed salmon and a homemade dressing that is irresistibly good! This salad is also perfect for meal prep and will change the way that you look at salads forever. PROMISE!
3. Chicken Shawarma Crispy Rice Salad
Ok this one also blew up my Instagram. This was the first new recipe I released in 2025 and I have made it at least once a month ever since. In fact, my boys Gavyn and Hunter who typically shy away from salads (or anything healthy for that matter hahaha!) always go for seconds and thirds making it a huge mom win. Yes, making this salad has a number of components, but please remember — make it once and enjoy it for several days on repeat. It’s a BIG salad!

I LOVE teriyaki anything - so naturally, teriyaki chicken needed its very own crispy rice salad. The one is the easiest one to put together because you don’t need to cook your protein separately — it used a rotisserie chicken! This salad is especially good for meal prep because there is no lettuce in the recipe, which means that nothing gets soggy and the flavors really build as the days go by. MAKE IT!
5. Crispy Rice Southwest Chicken Salad
Summer is around the corner and I don’t know if there is anything more satisfying than a vibrant southwest salad. Except the southwest salads I grew up eating were definitely not as fancy; think of this as a fancy and elevated southwest salad. The creamy avocado based dressing is thick and delicious and guaranteed to actually keep you full!
