Friends, I cannot believe it is August. I feel like I say that every month but this one is actually catching me off guard. I feel like I was just in Mexico City, and now the boys and I are headed to London, and somehow it is already August and I have no idea how that happened.
But, here it is! And the meal plan I have to kick off the new month is a REALLY good one. I have a few brand new recipes that I am really proud of and super excited to hear what you think. The dinners for this week also offer up a lot of variety which I love (and hope you do too!) and the lunch is actually insane how delicious it is. Plus, don’t think I forgot you on the snack—that one is a nod to a bit of nostalgia for me but in a little bit healthier, more protein-focused lens.

A crispy shredded potato crust pressed into a pan and baked until golden, then filled with a high-protein egg and cottage cheese mixture loaded with spinach and cheese, and baked again until set and puffed. Slice this High Protein Potato Crust Quiche into wedges on Sunday and keep it in the fridge all week. Reheats great and tastes just as good cold.
