Friends, I just got back from Mexico City with my sister and I am still thinking about everything I ate there. Traveling does something to me in the kitchen. I always come home with my head full of flavors and some serious inspiration. This week’s plan doesn’t have a Mexican recipe in it, but the energy is there.

One of the dinners was inspired directly from my trip to Japan last year. There’s also 20-minute orange chicken that is SO saucy and beats takeout every single time. YUP, I said it. Every. single. time.

Lunch is a watermelon poke bowl. It’s perfect for summer and a nice change in the typical lunch rotation. The breakfast is something you can make on Sunday and freeze if you wish, and the snack comes together in 10 minutes and is great for any time you need a quick snack that goes with just about everything.

Below you’ll find everything you need: the recipes, the grocery list, and a few tips to make the week run smoother. This week’s plan includes:

  • 1 breakfast

  • 1 lunch

  • 3 dinners

  • 1 snack

When I say that these are truly the Best Ever Croissant Breakfast Sandwiches, I mean it. These sandwiches are filled with soft scrambled eggs, melted cheddar cheese, and a medley of turkey, ham, and bacon, for a delicious and hearty breakfast on-the-go. Plus, these sandwiches can easily be prepared ahead of time, making them the perfect meal-prep recipe. Make sure to follow the meal-prep instructions if you’re going that route!

tips & swaps

  • Pull the eggs off the heat before they’re fully cooked

  • Wrap each sandwich first in parchment, then foil. The parchment keeps the croissant from getting soggy against the foil when it defrosts

  • Any cheese works if you prefer something other than cheddar.

  • Keeps in the freezer for up to one month
